Rachael Ray Recipe: Chili-Cheese Dogs in Beach Blankets

My kids have a thing for hot dogs.  Actually they have a thing for any kind of processed meat, or what I like to call “pink” meat.  Hot dogs, sausages, Spam (in case you didn’t know, Hawaii is the Spam capital of the world).  Healthy diet huh?  I try not to make it too often but sometimes you just want a hot dog, you know?

This Rachael Ray recipe comes from her Yum-O Family Cookbook.  The whole family enjoyed it and my son even ate the whole thing, not just the dog (which he usually does).

Chili-Cheese Dogs in Beach Blankets

Ingredients:

  • 1 tablespoon vegetable oil or EVOO (extra-virgin olive oil)
  • 3/4 pound ground beef, ground turkey, or tempeh chopped into fine crumbles
  • 1 tablespoon chili powder, a palmful
  • 1 teaspoon granulated garlic
  • 2 teaspoons dehydrated onion
  • Salt and freshly ground black pepper
  • 2 tablespoons tomato paste
  • 1 (13.8-ounce) tube refrigerator pizza dough
  • 1 1/2 cups shredded Cheddar cheese
  • 8 turkey or tofu dogs

Directions:

Preheat the oven to 400 degrees F.

Heat the oil in a small pot over medim-high heat.  Add the meat to the pot and brown it up, 6 to 7 minutes.  Season the meat with the chili powder, granulated garlic, dehydrated onion, and a little salt and pepper.  Add the tomato paste to the pot and stir it around for a minute, then add 1/4 cup water to help loosen the tomato paste and get it incorporated.  Turn the heat down to low and simmer for 5 minutes, then turn off the heat.

Roll out the pizza dough into a big rectangle.  Cut the dough in half lengthwise with a small knife.  Cut the dough into 4 equal pieces across so that you end up with 8 small rectangular pieces of dough.  Across the center of each rectangle place a couple of spoonfuls of chili sauce and sprinkle a small handful of cheese on top.  Set the dog on the dough and wrap and roll the pizza dough around the dog as you would for pigs in a blanket, sealing in the chili and cheese.  The nubs of each end of the dog should be peeking out.  Arrange on a baking sheet and bake for 18 minutes, or until golden.  Yum-o!

  • I know what you mean…sometimes I just get a craving for a hot dog! One of my 5 yr old granddaughters loves them, like your son - without the bun. I’ll have to try this recipe for her!

  • OH.. Yum-O indeed! You must be at my house and check out my fridge. I just stock up on a lot of hot dogs and now I have this perfect recipe for it. :) Thanks! I wonder though if I can make them in a big batch and freeze it for later.
